This olive oil tasting and food pairing farm experience takes you into the world of extra virgin olive oil the way it was meant to be understood: on the land where it's grown, guided by certified olive oil sommeliers who know every tree by name. Set on a certified organic, biodynamic, and regenerative farm in the hills of Hersonissos, the experience lasts three hours and moves between the grove, the old olive press, and the tasting table.
You'll walk through the olive groves and learn how cultivation choices, from soil health to harvest timing, directly shape what ends up in the bottle. At the old olive press, you see where the transformation happens. Then comes the tasting itself: several extra virgin olive oils side by side, evaluated for aroma, freshness, bitterness, and balance. You learn why color is not a quality indicator, what a genuine peppery finish means, and how to spot a defective oil without a lab. The session closes with a food pairing sequence, matching different oils to traditional Cretan foods and watching how the right combination changes the character of a dish.
The farm has been working this land since 1998, across 240 acres with over 240 varieties of vegetables and fruits, olive groves, herb gardens, beehives, and farm animals. It holds organic certification, Demeter biodynamic certification, and operates on regenerative agriculture principles. The sommeliers running the tasting are the same team that works with the farm's own production, so this is not a borrowed curriculum brought in for tourists.
